Mandazis are a favourite in most Kenyan homes.These are small pieces of dough that we have as a snack or with your morning cup of coffee or even your 4 o'clock cup of masala tea.They're a swahili cuisine.Also known as puff puff in the west.
I absolutely love the taste of nutmeg and cinammon together it's a match made in heaven and I hope you do too.Made these late at night because my cravings had to be satisfied and on this particular day I couldn't sleep without biting into these beauties.
Why eggless you might ask? Last year I had my second experience with allergies(can't recall my first lol!).Anywhooo,my allergies made me stop eating a couple of things for a while(I wasn't about to let allergies keep me away from meat) and venture into vegan dishes and that's when I found out eggs weren't really a necessity.
A couple of tweaks here and there and voila la recette!
2 cups all purpose flour
1/2 tsp salt
1/2 Tbsp cinammon powder
1 tsp nutmeg
1 1/2 cups warm milk
1 Tbsp melted butter/margarine
3 Tbsp sugar
2 tsp baking powder
Vegetable oil for deep frying
How to:
In a bowl sieve flour and baking powder together.
Add salt,sugar,cinammon and nutmeg,whisk until well-combined.
Form a well and add the warm milk and melted butter.
Knead your flour with your hands or use an electric handmixer until you form soft and elastic dough.
Roll out the dough on a floured surface.
In a pan heat the vegetable oil until hot enough.
Let your creative genius out and cut the dough into different shapes and sizes.
Gently place your pieces of dough into the hot oil and fry until golden brown on both sides.
Remove from oil and drain the excess oul on paper towels.
Serve warm and enjoy!
