My whole life is literally potatoes and I know yours is too.If not sis you missing out!I mean who doesn't like potatoes shape and form doesn't matter as long as P is at the start and S at the very end.
Potatoes are the simplest meal you can make.You can literally have these in whatever shape or form from fries,crisps,mashed potatoes the list is endless but my favorite are these crispy and savoury bhajia.
This particular ones were first introduced to me by my sneakylink😉.He got them for me for three days straight and Lord was I in love {with the potatoes not him}.From the garlic-ky taste to the coriander I could marry potatoes at this rate.A week later,however, they were all I could think about and I had to make my own with some spice ofcourse.
They have soon become my go-to when I need something fast and simple.Let's dive into the nitty-gritties...
10 medium-size potatoes
2 Tbs tumeric powder
2 tsps paprika
1/2 tsp cayenne pepper
1/2 tsp black pepper
1 tsp salt
5 Tbs finely chopped coriander
2 Tbs minced garlic
A cup of water
2 cups of all purpose flour
Cooking oil
HOW TO:
Heat cooking oil upto 177c
Peel, wash and slice your potatoes.
In a medium-size bowl add your flour,tumeric,paprika,cayenne pepper,black pepper and salt and mix until well-combined
Add in your water and whisk adding water if necessary till you achieve batter that is of slightly thicker consistency than that of pancake batter.
Add your coriander and garlic and whisk for 1-2 minutes.
Add the potatoes one batch after another and coat them evenly with the batter.
Carefully add the potatoes to the oil and cook for 8-10 minutes until golden brown
NOTE:
-DO NOT OVERCROWD THE PAN THIS WILL ONLY BRING DOWN THE TEMPERATURE
-VERY HOT OIL WILL BURN THE POTATOES AND COLD OIL WILL RESULT IN GREASY POTATOES
-YOU CAN CHECK THE TEMPERATURE BY ADDING ONE POTATO FIRST.
