In most homes,pancakes are an every Sunday breakfast meal not ours though.We have pancakes maybe once every month and when we do make pancakes,we go all out.In that same spirit of going all out,I made buttermilk pancakes the other day and let's just say you'll be making this every Sunday.
Buttermilk is fermented dairy milk.Commonly known as maziwa mala in Kenya.For this recipe,one can use buttermilk pancake mix,store-bought buttermilk or even make your own buttermilk at home.How? Simply add a tablespoon of vinegar or lemon juice to milk and stir then there you have it your very own buttermilk.
11\2 cups All purpose flour
1 tsp baking powder
11\2 cup buttermilk
1\2 cup whole milk
1 egg
1\4 cup sugar
1 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
HOW TO;
In a bowl,mix all the dry ingredients; flour, baking powder,sugar,salt and cinnamon.
In a different bowl,mix all the wet ingredients; buttermilk, whole milk,egg and vanilla extract.
Gradually add the wet ingredients to the dry ones till you achieve the desired consistency.If there's need to add more buttermilk do it bit by bit.
Oil and heat the pan and pour about 1\4 cup of pancake batter onto it.
Cook under medium heat till the bubbles begin to burst then flip.
Drizzle honey or maple syrup and enjoy!
