Yummy beef stew is the ultimate comfort food.You can whip this up when you really not in the mood to throwdown.You know that chill Saturday afternoon when you want to binge watch your favorite show? This is the perfect recipe.
Served over creamy mashed potatoes or cumin rice,this ought to leave you satisfied for hours.
1/2 kg beef
2 carrots diced
1 tomato diced
1 red onion diced
1 Tbs ginger and garlic paste
1 green bell pepper diced
Finely chopped coriander
1 Tbs soy sauce
1/2 tsp cayenne pepper
2 beef cubes
Salt to taste
2 Tbs vegetable oil
HOW TO:
In a pan, add the vegetable oil and onions cook till translucent.
Add the beef and let cook till brown and tender.Add a bit of water if necessary.
Into the beef,add diced carrots and tomatoes.Let cook for 6-8 minutes.
Add the ginger and garlic paste,soy sauce, cayenne pepper,beef cubes and salt and give it a stir.
Cover and let simmer for 5 minutes before adding the beef broth/vegetable stock.
Bring to a boil.
Finally add the bell pepper and coriander,let cook for a minute or two then serve.
